Start fresh with gourmet popsicles crafted from fruit, juice and simple syrup infused with unexpected ingredients. Practice egg separating and pastry dough making as you bake tarts filled with creamy custard and topped with your favorite fruits. BE VISIONARY to reimagine a classic muffin recipe with custom flavors and enticing add-ins. Make a beautiful batch of expertly kneaded, filled and decorated pie cookies. Learn a little kitchen chemistry while whipping up a crisp, airy batch of meringue cookies. BE REFLECTIVE as you sample each sweet and think about how to enhance its look or taste, then add it to the menu of your own dream dessert cafe.

The curriculum includes some of our most popular recipes. If your child has taken our single-session Gourmet Popsicles or Marvelous Meringues class or has made fruit tarts or muffins at Galileo Summer Quest, they’ll be familiar with some of this week’s projects—and have the chance to put a new twist on a sweet they’ve made before.
