What You'll Do

How sweet it is to make, bake and taste your way through this delicious weeklong class. Build your culinary skills and broaden your recipe repertoire as you create a suite of treats full of flavors, fruit fusions and fabulous decorations you design yourself.

Start fresh with gourmet popsicles crafted from fruit, juice and a custom simple syrup infused with unexpected ingredients. Make mighty tasty mini cheesecakes, gorgeously plated and finished with a flavorful sauce. BE DETERMINED as you perfect your pastry dough technique, then make flaky tarts filled with creamy custard and topped with your favorite fruits. Whip up a beautiful batch of expertly kneaded, filled and decorated pie cookies. Bake cupcakes and BE VISIONARY as you invent an irresistibly flavored frosting and pipe it on in creative designs. Throughout the week, create a name, logo and mouthwatering menu of treats for your very own dessert cafe.

Note: This weeklong class is more than just innovation-igniting projects—it’s an immersive experience full of delightful details, including interactive games, silly traditions and dress-up days designed to build community, bolster confidence and deliver loads of camp-away-from-camp fun.

The curriculum includes some of our most popular recipes. If your child has taken our single-session Gourmet Popsicles class or has made mini cheesecakes, fruit tarts or cupcakes with buttercream frosting at Galileo Summer Quest, they’ll be familiar with some of this week’s projects—and have the chance to put a new twist on a treat they’ve made before.

What You'll Need

Ingredients
  • Dry ingredients: flour, granulated sugar, powdered sugar, baking powder, salt, cornstarch, graham crackers
  • Wet ingredients: unsalted butter, milk, whipping cream, cream cheese, sour cream, eggs, vanilla, citrus juice, assorted fruit
  • Additional flavorings (choose 1-2): ground spices (cinnamon, nutmeg, instant coffee), whole spices (cardamom pods, ginger root), extracts (peppermint, lavender, rose water), sweeteners (honey, maple syrup)
  • Add-ins (choose 1-2): chocolate chips, nuts, dried fruit

Materials
  • Appliances: stove or electric burner, oven, blender, electric hand mixer
    Cookware/bakeware/mixing: muffin tin, baking sheet, saucepan, mixing bowls
  • Tools/utensils: measuring spoons, measuring cups, whisk, spatula, fork, butter knife, sharp knife, rolling pin, circle cookie cutter or cup (approx. 1.5-2.5″ dia.)
  • Freezing options for popsicles: popsicle molds OR ice cube trays/small disposable cups + plastic wrap + popsicle sticks/toothpicks/wooden skewers
  • Other essentials: oven mitt, potholder (for resting a hot pan), muffin tin liners, zipper bags or piping bags, parchment paper, toothpicks, storage containers (to store treats)
  • Miscellaneous supplies: pencil or pen, notebook or 10+ pieces of paper (for note taking), camera or smartphone (for food photography)
  • Optional: vegetable peeler, cutting board, hard object like a food can (for crushing whole spices), mesh strainer or spoon (for removing pieces from syrup), pastry brush (for spreading egg wash on pie cookies)
